WThis is a home-style version of a cocktail featured on a new cocktail list. This is a batch pre-mixed that's packed with essence of the festive period, which makes it ideal for a holiday party. Save the extra cordial for breakfast cocktails, sweets, or to make additional servings of this cocktail.

Yields 10 people
For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place every ingredients in a pan, bring to a simmer, agitating to dissolve. Next, take off the burner and leave to cool entirely. Transfer into an clean bottle, seal and store chilled, it will last for about four weeks.
Preparing the Batch Mix: Pour all the spirits and syrup in a sizeable container, allow it to infuse for one hour, then strain , ideally through a fine cloth, to ensure it's fully clarified.
To serve: Measure 85ml of the cocktail base to a mixing glass containing ice, and stir lightly for a minute to chill. Filter into an chilled martini glass or similar, decorate with some cranberries and finish using a brief mist of the essential oil over the drink.
